THE JUNE CLEAVER IN ME

Hey, what if you had a great recipe....you where keeping all to yourself?I think that would be bad! It's Friday night and I'm sick to death of my own cooking.

The June Cleaver in me wants to trade recipes. So I'll start.

Easy Sausage Bake OK ,that's no good for a name, let's call it Sausage Florentine. The thing I love about this is that I can keep most of it on hand. A kind of food storage user-upper. That and my family raves when I make it. They say things like "this really does taste good", like they are surprised it could.

Sausage Florentine
1 Bag Egg Noodles (Prepare according to package instructions)
2 Jars Spaghetti Sauce (one you love) 2 jars because it can get dry
2 lbs (or to taste) Italian Sausage (keep some in the freezer)
1 cup Parmesan Cheese (keeps in the fridge forever0
3 eggs
5 Green Onion sliced
2 cups Ricotta Cheese (cottage cheese works great too)
Instructions: Cook sausage and add to Spaghetti Sauce
Add eggs to cooked noodles along with the cheese and onions
Layer the noodles then the sauce and ricotta cheese twice, then
top with a little cheese and bake till it bubbles. About 30 min. Tip: For smaller families divide in half and freeze one.

BBQ CHICKEN PIZZA
1 BAG FROZEN BREAD DOUGH
1 ROASTED CHICKEN
BBQ SAUCE YOU LOVE
1 ONION SLICED & SAUTEED
MOZZARELLA CHEESE
Thaw out bread dough, and roll out in desired shape
cover with BBQ sauce, add shredded or diced roasted chicken, onions, and cheese. cook at 475 till done.

Whats more is, I roasted 6 chicken breast on Sunday use 1/2 for BBQ Pizza and the other 1/2 for Lauras' Enchiladas on Monday! love it. LEAVE ONE OF YOUR FAVORITES THERE TOO.

I have searched for a good Chicken Enchilada Recipit, and I think I finally found it!

Chicken Enchiladas
2 c chopped cooked chicken
1 cup sour cream
1 (7 oz can) chopped green chilies
1 c chopped onions
1/2 tsp salt
4 cups shredded cheese
flour tourtillas
1 large can mild enchilada sauce
(dash of cayanne pepper) if you like it a little spicy

Saute onions until golden add the rest of ingredients together.
1 thing you must do is poor some of the encilada sauce on the bottom so they don't get hard! Then on the top of them as well to not get hard. Place them all in a 9*13 pan bake uncovered at 350 for 20-30 min. Delicious and fast...and please enjoy!

Can hardly wait to try all these awesome recipes. Love the blog world and being able to keep up with the latest that is happening in your lives even when we are on the road, in the Big Apple, on the way to St. Louise or back home on the farm.
